How to pick your calypso

Selection

  • A Calypso™ Mango is ripe and ready to eat when the flesh gives slightly when pressed at the “beak” of the mango
  • Do the thumb test as shown  – hold the mango in the palm of your hand and gently press the flesh with your thumb at the “beak” of the mango – opposite end to the stem.
  • They do not give off a strong aroma so don’t wait for the strong mango smell!


Storage

  • Always store unripe Calypso™ Mangoes at room temperature out of direct sunlight – never in the fridge!
  • Once fully ripe you can keep them in the fridge for up to 3 days but who can wait that long?


Easy to prepare

  • Cut the mango from the stem end keeping the knife very close to the stem – remember a Calypso™ Mango has a super small seed!
  • Slice off each cheek using a sharp knife. The knife should glide over the stone if the fruit is perfectly ripe
  • Score the flesh of the mango cheek into a diamond pattern
  • Using your hands, push the mango cheek inside out
  • Now you can eat the flesh straight from the cheek or cut off the cubes for use in all kinds of delicious recipes!
